Becoming glutenfree and milkfree

Making a life commitment to eating without gluten or milk-products in my diet may possibly make some shrug their heads, while others becomes eager to hear the weight-benefits from this change. To me its a choice that changed the way I live and the quality of my life.

I did not know that changing my diet would in so many ways change my life. However, I would not recommend this change for someone who is "only" seeking to loose weight. Despite the fact that the change have had an impact on my weight, I would under all circumstances choose an easier way to loose weight. Because for me it is not just about loosing weight, it is to a greater extent about whether or not to spend hours in a bathroom later on. For so many years of my life I spend in embarrassment  regarding things I don't even want to elaborate on. Only the fact that I at times was not very pleasant to spend time with. I was embarrassed and thought that there was something wrong with me. Instead I found that there was something wrong with the food I loved the most. 

Despite my great love for whipped cream, I have not regretted saying goodbye to that and many other food-loves in my life for the life I have now and if I knew the benefits before hand I would have done it previously. 

If you think you might have the same problem, I urge you to seek a doctor or a nutritionist. Do not make the changes on your own!

Glutenfri, mælkefri ... og kødfri?

En ting er helt at udelade mælkeprodukter og glutenholdige produkter fra ens kost, en anden er at overveje at skære ned på ens forbrug af kød også! Jeg bliver aldrig vegetar eller veganer, til trods for at jeg virkelig godt kan lide deres argumenter for at sortere bl.a. kød ud af deres kost. Men her på det sidste har jeg fundet ud af i hvor høj grad vores "kød-forbrug" er med til at ødelægge den jord vi nu engang bor på og det kan vi da ikke have. I et stykke tid har jeg derfor overvejet og undersøgt hvordan jeg kunne skære ned på kød-forbruget men stadig få den næring jeg har brug for. Problemet med det her er, at kød godt kan synes at være den eneste kilde til at blive fuldkommen mæt når man hverken har brød eller mælkeprodukter til at kompensere for den manglende proteinkilde... 
Dette forblev min opfattelse indtil jeg faldt over en artikel i Iform, hvor de sammenlignede mængden af protein i forskelligt kød overfor forskellige bønner og snacks. Faktisk viste det sig at soyabønnen havde væsentligt mere protein i sig end kødet som var anført som det mest protein-indholdige af al kød.

Ydermere, introducerede en god veninde mig for noget der lignede spagetti men var lavet af soja-bønner, hvilket jo resulterede i at der faktisk var utroligt mange proteiner i pr 100 gram. De kan købes i Fakta og hedder: "Økologisk Fettucini lavet af sojabønner". 

Pludselig synes det at være glutenfri og mælkefri, og have kødfrie dage ikke helt umuligt. Nu handler det blot om at finde gode og nemme opskrifter!

Amazing and easy diary-free ice cream!

I have literally tried any type of diary-free ice-cream, but non as good as this one. It is one of the Danish Fitness / healthy food-guru's that made this in TV the other day, and I just have to share this recipe with anyone who wants to listen! IT IS AMAZING. If you are a Dane - look here. To those of you who don't understand Danish, I will translate. It is made by Michelle Kristensen and she has a lot of amazing ideas and easy recipes! I loooove this!

3 frozen bananas is put in a blender together with 0,5 dl almond milk, 2 fresh dates (remove stone) and 1 teaspoon peanutbutter. Blend it all and eat!! It is amazing and I simply cannot get enough! The other day I included some frozen berries and it did not destroy the ice-cream.

Ideas to the low-budget travel in Denmark

When traveling in any country there will always be tricks to make it a cheap and easy travel. I will share some of the tips and tricks here I have made use of several times.

1. DSB is one of the train services in Denmark with whom you can travel across the country, however can be expensive compared to the alternatives that do exist. However, it is the easiest way and the most convenient when traveling long distances in Denmark. Do order the so-called "Orange" tickets. They are the cheapest to find, but they have to be bought in advance and cannot be changed when bought. Find a Dane to help you find these tickets, because it is not easy to find them on the english version of DSB's webpage. 

2. Instead of DSB, I would recommend travelling with Abildskou.dk or rødbillet.dk. If you are lucky and early in the ticket hunt, you can even find tickets from 50 kr at Abildskou.dk!! I once travelled from Aarhus to Copenhagen on such a ticket! With rødbillet you get free coffee and they have a break on Fyn and both bus-companies offer free WiFi during your travel! 

3. When traveling within Copenhagen it can be an idea to buy a "rejsekort". You can travel with all busses within the city of Copenhagen as well as in Aarhus. It is not all cities in Denmark that have this card yet, but it is on the way. All you have to do before you travel with the card is to load money on it and then you check in when your travel begins and every time you change bus or train and check out when your travel has ended. 4. Concerning restaurants, food and such there is a lot of guides and reviews of such on aok.dk or aoa.dk. But the most exciting thing is that in Copenhagen (and from 2017 also in Aarhus) a new and supermarket have opened with an amazing concept. It is the first store in Denmark with surplus food - not in the sense that it has already been half eaten, but groceries that in the regular supermarkets cannot be sold because they either have a bump or something else. I find that the store and the uniqueness of its concept is worth a visit. Read more here (unfortunately only in Danish). It opens from monday to friday from 15-19 and the address is Amagerbrogade 151, 2300 Copenhagen.

5. If you want to know what restaurants and cafes serves glutenfree and diary free alternatives, then several websites do share this information. Foursquare lists 15 places in Copenhagen that are worth trying, but if you have a Danish friend who can translate for you, this blog offers lists of places to eat in different cities - an AMAZING blog. I have myself tried the cafe called Glad! and will have to try Cafe Ganefryd next time in Aarhus. In Copenhagen I am crazy about the cafe 42RAW and also Hard Rock Cafe!

Lækre Glutenfrie og Mælkefrie Amerikanske Pandekager

Jeg elsker amerikanske pandekager og specielt dem her. De er nemme at lave og lækre luftige. Der skal ingen sukker i og kan steges på en pande uden fedt, hvis man er i besiddelse af de der smarte pander hvor man ikke behøver sådan noget som fedt for at lade pandekagerne slippe. Så der er minimeret på det usunde, så man kan fyre godt under siruppen når man spiser dem.

Ingredienser:
3 æg
1 tsk salt
1 tsk bagepulver
2 tsk vanille.
100 gr boghvedemel (eller andet alternativ).
1,5 dl plantemælk (Soya eller mandelmælk).
Evt 1 tsk kanel og skiveskårne og skrællede æbler.

Fremgangsmåde:
Del æggehvider og æggeblommer ad. Pisk æggehviderne med saltet til skålen kan vendes på hovedet uden at indholdet falder ud. Bland æggeblommer, mælk, bagepulver og vanillesukker sammen i en skål for sig. Vend melen ind i den til den får en flydende men ikke for flydende konsistens og herefter vender man æggehviderne i blandingen. Vend dejen til æggehviderne bliver en del af dejen. Til sidst klatter man dejen på en pande, vender og værså god - så er der amerikanske pandekager.
Hvis du er til lidt ekstra muf og mums kan man med fordel vende 1 tsk kanel i og evt 1-1,5 æble (skrældet og skåret i tynde skiver) i dejen og stege dem på panden. Det gør dem også monster gode!

The Life of a Person With "Coeliac Disease and Milk Allergies"

I do not eat gluten or diary products. Not in some insane attempt to loose weight. I’m sorry if that offends you, but I just find the change insane if there is nothing wrong with you besides a wish to loose weight. I eat the way I do, because my body told me to. My quality of life has just improved and simple things, that I before was “just the way they are”, changed because of my diet-change.
However, my change of diet has caused some problems around me, especially in situations where someone doesn’t know me very well, so I honestly just wanted to clear some air on two small matters. Maybe, if you have a friend that is in the same situation, these two things might help you, help her or him.
 
First: Now, it would honestly be a whole lot easier for me to say that I am a vegan that eat meat. It seems to me that people just don’t understand the difference between not eating diary products because the diary makes me sick and not eating diary products because the lactose makes me ill. People, THERE IS A DIFFERENCE. When I say I don’t eat diary products – it is because I don’t eat them. Don’t just assume that I then eat lactose free products, because at the end of the day I still have to spend an hour or two in the bathroom – and not to just wash my face and freshen up. In rare situations I eat them, because there wasn’t anything else on the table or because I was too good of a person to brake it to someone else, that what they have made for me, I still can’t eat. The fact that someone makes the effort just makes me so happy that I’d rather pick the time in the bathroom over correcting someone trying to make me dinner.

Second: It is OK to tell me that I have to bring my own food because making me dinner for your party is relatively difficult. I understand! Trust me. The same way it is rumored that you see your life before you die, I saw all the food that was banned for lifetime for me, when I found out that this might be a problem for me. It took me a LOOOONG time to come to terms with it and learn all the things I could eat from all the things I can’t. So trust me when I say, I UNDERSTAND. Just say it in advance and maybe also what you have planned to make for dinner, so that I can match the dinner as much as possible. Please do not expect that I will be able to figure it out a day in advance, because I can't. I'm not superwoman. I'm just generally busy!

Generally, it is not because I don’t understand. What I am simply trying to say is that it can pay of to be specific! If you are in doubt leave it out – or call a friend.
